Yogurt pancakes and zucchini cooked on kefir


Summer squash is available to everyone. During this period, they are young, which means more tasty and healthy. From them you can cook a variety of dishes and pancakes. Pancakes from zucchini on kefir are very tasty, as well as pancakes. They can be served with the main course as an appetizer, and sweet ones with tea. Various fillings are also wrapped in pancakes: from mushrooms or meat. Choose a recipe to your taste!

Pancakes from zucchini on kefir (a simple recipe)

To prevent pancakes or pancakes from tearing and sticking, it is important to properly prepare the pan: wash it thoroughly and calcine with a small amount of salt. Then remove the salt, wipe the bottom of the pan. After that, heat oil in it and start frying pancakes.

Required Products:

  • 1 young zucchini;
  • eggs - 3 pcs.;
  • kefir - 2 tbsp .;
  • 2 large spoons of flour and vegetable oil;
  • a pinch of soda;
  • salt, sugar.

Cooking:

  1. Zucchini, peeled, finely grate and squeeze the juice from it.
  2. Add a little soda to kefir to make a reaction.
  3. Beat eggs, add salt and sugar.
  4. Stir all ingredients until smooth. It should not be thick.
  5. Then add a little flour and mix, pour 2 large tablespoons of olia. Set the finished dough for 10-15 minutes, only then you can fry pancakes.
  6. Pancakes need to be fried with a small amount of oil in a preheated pan. For turning pancakes it is better to use a wooden spatula.

According to the same recipe, pancakes are also prepared. To do this, make the dough thicker: pour less yogurt, and add flour. To make sweet pancakes: just add 1-2 large tablespoons of sugar and a little vanillin to the dough. They can be eaten with jam or condensed milk.

Pancake rolls with garlic and spices

It is important to make pancakes of the correct thickness. So that they are well cooked and at the same time not fall apart, the thickness should be about 3-4 mm.

Ingredients:

  • zucchini - a pound;
  • 1 egg
  • kefir - 5 tbsp;
  • 150 g of flour;
  • olia - 3 tablespoons;
  • dill;
  • baking powder - a third of a teaspoon;
  • spices: turmeric, curry and black pepper.

Filling:

  • 1 medium-sized carrot;
  • mayonnaise - 3 large spoons;
  • a couple of cloves of garlic.

Cooking:

  1. Zucchini peel and rub. We salt them and set aside for 15 minutes so that they let the juice go. Then we merge it.
  2. Beat the egg with kefir and add to the zucchini.
  3. Throw chopped dill, baking powder and spices to taste, mix.
  4. Pour the sifted flour and mix again.
  5. At the end, add a glass of cold boiled water and olia. The dough should be like liquid sour cream.
  6. Fry pancakes in a well-heated cast-iron skillet.
  7. The filling is prepared simply: mix mayonnaise, grated carrots and garlic.
  8. We grease the finished pancakes with the prepared mixture and turn them into tubes.

Zucchini pancakes with herbs and garlic

Ingredients (for 8 servings):

  • zucchini - 2 pcs.;
  • 3 eggs;
  • kefir - 200 ml;
  • flour - 1 cup;
  • a couple of cloves of garlic;
  • soda - on the tip of a teaspoon;
  • greens (dill or parsley);
  • vegetable or butter for frying.

Cooking:

  1. We prepare the ingredients: peel the zucchini and rub on a fine grater, chop the garlic and herbs.
  2. Beat eggs until white foam, then pour in kefir and beat a little more. Add flour and soda, salt. Mix everything until smooth.
  3. Mix the dough with zucchini, garlic and herbs. Let it brew for 10-15 minutes.
  4. Fry pancakes in a heated skillet from two sides. They should be rosy.

Pancakes are best fried in a cast iron skillet with a thick bottom. This dish needs to be eaten hot. You can serve pancakes with sour cream or some sauce to taste.

Potato marrow squash

Ingredients:

  • 1 squash of medium size;
  • 3 medium potatoes;
  • flour - 1 tbsp .;
  • a pair of eggs;
  • add greens to taste;
  • a pinch of soda.

Cooking:

  1. Peel potatoes and zucchini from the peel. If zucchini with seeds, then they must be removed. Grate the vegetables and add them. Then squeeze out the liquid.
  2. Chop greens.
  3. Beat the eggs with salt in a blender.
  4. Mix all these ingredients, add kefir and flour, mix again. You can pepper or season the pancakes with other spices to taste.
  5. Fry on both sides.

Serve pancakes with sour cream. There is a dietary option for cooking fritters from zucchini: you just need to replace the frying with baking in the oven, or cook them for a couple.

Zucchini and carrot pancakes

This is a sweet recipe for fritters, they can be prepared for children. Zucchini is better to use young.

Ingredients:

  • 0.5 kg of squash;
  • 1 carrot;
  • a pair of eggs;
  • flour - 150 g;
  • half a glass of kefir;
  • sugar - 3 large spoons;
  • a bag of vanilla sugar;
  • a large spoonful of starch;
  • lemon - 1 pc.

Step by step recipe:

  1. We clean the washed vegetables and three on a fine grater. Zucchini must be squeezed slightly.
  2. Beat eggs, pour kefir to them, add sugar and vanillin, as well as a pinch of salt.
  3. Pour the zest of one lemon to the eggs and kefir and pour the flour with starch, mix thoroughly.
  4. Add zucchini and carrots to this dough. Again, mix everything until smooth.
  5. We form small cakes with a spoon and fry them with a small amount of oil.

To make pancakes not so greasy, they need to be laid out on a paper towel that absorbs excess fat.

What to make pancakes tasty

A couple of tips when cooking pancakes from zucchini:

  1. Never do a lot of dough, as zucchini will let out juice, and the last batch of you will fall apart.
  2. The finer the grater, the more uniform the dough for future pancakes or pancakes will be.
  3. It is better to use sifted flour, then the dough will be more magnificent.
  4. With a lot of sugar, pancakes will burn.
  5. Kefir should be at room temperature, but not cold.
  6. Do not leave a spoon in the dough.
